He’s like a combination of George Armstrong Custer, The Crocodile Hunter and Tom Savini
This character doesn’t have a real name but is referred to at one point as “the Dark One.” He was originally intended to be Aboriginal and May Swaisey’s husband, also Max’s former partner (both their names are stencilled on the Interceptor, M. Rockatansky and The Dark One). The casting changed because the actor they had wanted backed out, and I guess they couldn’t find another suitable indigenous actor in the time available. His relationship with May also wasn’t established, perhaps because the replacement actor looks a bit young to be married to a woman May’s age, but that would have explained why the Rockatanskys were visiting her.
As it stands, the Dark One seems like he might be some kind of local sheriff, since Max and Jessie hand over (ha!) the severed hand to him and ask his advice about it, and when Jessie comes back to the house terrified after she was chased by the gang, Max tells May to phone the Dark One before heading off with a shotgun, like a nong, to look for the gang by himself, instead of staying at the house and keeping everyone together in a more defensible position.
Seriously, if Max had not been such a nong about that, things might have turned out better for the Rockatanskys.
Also, if someone had been keeping an eye on Sprog at all times, not just leaving him on a picnic blanket outside the house to play, so he could be easily snaffled by evil bikers. It’s rural Australia! There are snakes and spiders! Failing that or evil bikers, there are some fucking big bitey ants. It’s really not smart to leave a toddler unattended outdoors.
Sprog is left unattended so many times it’s a wonder he didn’t die sooner
