I suspected Lower Decks would take a great deal of care in animating Sisko's Creole Kitchen as it appeared in DS9. Tendi and Rutherford are sitting in that little dining area that has a view of the kitchen. And they're sitting at the specific table that's on the right in the screen cap from the DS9 episode Homefront. Also, if you watch carefully during this scene in the Lower Decks season premiere, you get a glimpse through the door way into the main dining area and you can see the alligator suspended from the ceiling.
I know some people were hoping for a quick little cameo of some DS9 character but I'm not certain it would've felt right without the presence of Joseph Sisko. But sadly Brock Peters passed away in 2005. Also, even though one of the relaunch novels had Joseph passing away not long after the series concluded, I like to think he's still alive and well and running his restaurant in the prime branch of the Trek multiverse.
And I noticed that even from the trailer many in the fandom noticed the hot sauce.
Just to put this in perspective, a jalapeno is between 2500 to 8000. A habanero is between 100,000 to 350,000. The carolina reaper is between 1.4 to 2.2 million. Pure capsaicin is 15 million. So this is worse than pure capsaicin.
So here's a head canon. During the war, the Dominion took control of the Kabrel system because there's a fungus there that can be processed into one of the ingredients for ketracel white. So after the war, Starfleet was clearing out the Dominion facility for making ketracel white and some stupid crewman tasted some of the processed fungus and found it was incendiary hot. Thus, Ketracel White-Hot was born.
Also, there was more than one mention of the London Kings. This is the baseball team that had Benjamin Sisko's all time favorite player. As Sisko became a famous war hero, what if his interest in baseball sparked curiosity about it throughout the Federation and eventually led to the revival of the sport on Earth?
