Why is it SO DANGEROUS that Will freaked out upon learning his (fake and not real) 12 y/o son was playing it and got a little boo boo.

In his family simulation the EMH's daughter literally died from this?? I am so curious about this apparently very common but very deadly sport in the Star Trek universe.
