I do wish they had turned him into another “Garak.” A strong reoccurring character that got an occasional storyline. Have him be a klingon who is not about the glories of battle. Who sticks with DS9 when the empire declares war on the federation.
Have him become Sisko’s best non-main cast friend, because they both love cooking, and sharing recipes. And this dude is the only other person on the station who gets it.
Sure he runs a Klingon Cuisine restaurant, but he loves all cuisines. He just wants to teach other cultures how to appreciate the cuisine of his culture.

What happened to the Klingon Restaurant? Did the Chef leave once the Federation/Klingon treaty ended or did he stay? According to Memory Alpha it was still (or back) there later in S4.
Did he fight in the Big Battle in The Way of the Warrior. Against his people? for his people? Did he, perhaps, just provide entertainment and sing as song as the disruptor bolts and bat'leths were firing?
