this gem can literally pick up a full sized injector with one hand, I don’t think that Peridot got ‘lightly squeezed’

Yeup. Plus, at that point Peridot was exhausted and panicky, and I tend to suspect that as with humans, a Gem’s mental state affects how resilient she can be.
