A handful of Star Trek/Doctor Who art by J.K. Woodward, particularly keen on the assimilated Dalek. That actual crossover itself wasn’t up to much to be honest, had it’s moments sure but the whole thing collapsed under the weight of the two franchises, but the art was never the problem on that front. 

The proposed sequel with DS9, from what’s available on it, sounds like it addressed a number of the issues with the first one. Personally, Two, Jamie, and Zoe meet the TOS crew is the obvious choice as Star Trek crossovers go.
